One of our grocery chains does a tomato, bacon and lentil soup that we love, so I thought I’d try and recreate it in the Thermomix.  This is a filling soup that’s great for cold winter lunches and it’s quick and easy to make.

Makes 2L

Ingredients

Tomato Bacon Lentil Soup | Thermomix1 red onion, peeled and quartered

1 large leek, white part only, cut into 1 cm pieces

1 clove garlic, peeled

4 pieces rindless short cut bacon, fat trimmed and cut into 3cm pieces

20g olive oil

2 carrots, peeled and diced into 1cm pieces

1 tsp dried thyme

1 bay leaf

130g dried green lentils, rinsed

2 x 400g diced tomatoes

50g tomato paste

20g Worcestershire sauce

40g Thermomix vegetable stock concentrate

Pepper, to season

Instructions

1. Put onion, leeks, garlic and bacon into the Thermomix bowl and chop with the measuring cup (MC) on for 3 seconds/Speed 5

2. Scrape down the sides of the bowl, add oil and cook with the MC off for 4 minutes/Varoma/Speed 1

3. Add remaining ingredients into the Thermomix bowl and stir to combine

4. Add enough water to reach the 2L mark in the Thermomix bowl and cook for 30 minutes/100C/Reverse/Speed soft with the Thermomix basket sitting on top of the lid

5. Remove bay leaf before serving
