My first attempt at soup in the Thermomix worked out so well, that I thought I’d make another one. A lot of creamed soup recipes include flour, butter or cream to thicken them – but I think potato or sweet potato works well, while providing a bit more nutritional value.
Ingredients
1 large onion, peeled, quartered
1 clove garlic
20g light olive oil
1tbsp coriander powder
1tbsp cumin powder
600g pumpkin, cut in 3cm pieces
400g sweet potato, cut in 3cm pieces
1tbsp TMX vegetable stock concentrate
500g water
200g milk
Salt and pepper to season
Instructions
1. Add onion and garlic to Thermomix bowl and cut for 3 seconds/Speed 5
2. Scrape down the sides of the bowl with the spatula, add oil and sauté for 3 minutes/100C/Speed 1 with the measuring cup (MC) off
3. Add cumin and coriander and sauté with MC off for 3 minutes/100C/Speed 1
4. Add sweet potato, pumpkin, stock, water and milk and cook for 25 minutes/100C/Speed 1 with MC on
5. Blend with MC on for 1 minute – slowly going from Speed 1 to Speed 8
