Here is my first attempt at stuffing chicken thighs and cooking them in the Varoma.  I love that the steaming keeps the meat nice and moist and that the stuffing packs heaps of flavour.  I’ve labelled it “Version 1” as I think I can do even better with this dish, so look out for further updates.

Stuffed Chicken Thighs ThermomixServes 4-6


½ small onion, peeled and halved

2 cloves garlic, peeled

15g parsley leaves

1 tbsp lemon juice

6 mushrooms, halved

6 chicken thigh fillets, fat trimmed

Salt and pepper, to season

Toothpicks or wooden skewers


1. Add mushrooms and parsley into the Thermomix bowl and chop for 5 seconds/Speed 4; remove to a bowl

2. Add onion and garlic into the Thermomix bowl and chop for 6 seconds/Speed 5; add to the bowl with the mushroom mixture

3. Season stuffing with salt and pepper, add lemon juice and mix to combine

4. Layout chicken thighs out flat and divide the mixture into the centre of each thigh

5. Fold each thigh in half and secure with toothpicks or half of a wooden skewer; sprinkle with salt and pepper

6. Put chicken on the Varoma tray and assemble the Varoma; making sure the chicken does not touch the lid

7. Put 500g water in the Thermomix bowl, put the lid and Varoma on top

8. Cook for 20-25 minutes/Varoma/Speed 2 (or until the chicken juices run clear)

Tips and Hints

1. To stop the chicken from sticking to the Varoma, take a piece of wax or baking paper and poke some holes in it with a knife and lay it on the Varoma tray before putting the chicken on top

2. Steam vegetables in the Varoma bowl while cooking the chicken for an all-in-one meal


In case you’re wondering – yes, the chicken is cooked!  I took this picture after checking that the juices ran clear and resting it for about 10 minutes.
