Here’s a great all-in-one dish.  Everything is cooked in the Varoma and then the purée is finished in the bowl while the sausages and peas finish cooking.  If you don’t like the look of steamed sausages, you can add some colour by frying them on the stove after removing from the Varoma.

Sausage Cauliflower PureeServes 4

Ingredients

500g water

1/2 head cauliflower, cut into florets (~500g of florets)

400g can cannellini beans, rinsed and drained

800g thick sausages

1 large onion

20g olive oil

1 tbsp Thermomix vegetable stock concentrate

20g water

50g reduced fat milk

Salt & pepper, to season

2 cups frozen peas

 

Instructions

1. Put 500g water into the Thermomix bowl and close the lid

2. Put cauliflower and beans in the Varoma bowl and sausages on the tray and cook for 20 minutes/Varoma/Speed 1

3. Remove Varoma and empty water from the Thermomix

4. Put onion in the Thermomix bowl and chop for 4 seconds/Speed 5

5. Scrape down the sides of the bowl, add oil into the Thermomix bowl and sauté with the measuring cup (MC) off for 2 minutes/100C/Speed 1

6. Put cauliflower, beans, stock, water, milk, salt and pepper into the Thermomix bowl and close the lid

7. Put peas into the Varoma bowl, assemble the Varoma and put on top of the Thermomix

8. Cook for 5-10 minutes/Varoma/Speed 1; extend cooking time if sausages are not cooked through

9. Remove the Varoma, put the MC on the Thermomix and purée for 1 minute – going slowly from Speed 1 to Speed 8
