In this week’s meal plan, there are a couple of new recipes, a stir-fry and pasta.  Breakfast is a fast and easy assembly option.

For breakfast, I’m going with 200g natural yoghurt topped 2 tbsp muesli – both store bought.

For lunch on Monday, Tuesday & Wednesday, I’m going to try a chicken saag in the Thermomix and will serve it with cauliflower rice.  The curry recipe is here.  The cauliflower rice is from the Super Kitchen Machine website.

For dinner on Monday and Tuesday, it’s another new recipe in the Thermomix with fish cakes made with salmon.  I’ll serve these with peas and broccoli steamed in the Thermomix.

The beef this week is in a stir-fry for Wednesday’s dinner and Thursday’s lunch.  The vegetables are cauliflower, mushrooms and green beans.  The simple stir-fry recipe can be found here.

Thursday’s dinner is fettuccini with prawns, snow peas and broccoli.  The pasta recipe is here.

Draft Recipe

Fish Cakes

Ingredients

800g salmon fillets

600g sweet potato, peeled and chopped into 3cm chunks

400g potato, peeled and chopped into 3cm chunks

200g reduced fat milk

2 stems spring onion, finely sliced

Salt and pepper to season

Light olive oil for frying

Instructions

1. Add potatoes, milk and salt into the Thermomix bowl and cover with lid

2. Put the salmon, skin side down on the top tray of the Varoma

3. Assemble Varoma, place on top of the Thermomix and cook for 20 minutes/Varoma/Speed 1

4. Add butterfly and whip potatoes for 20 seconds/Speed 3

5. Peel skin from salmon, break up flesh into bite-sized pieces and put in a mixing bowl

6. Add potato, spring onions, salt and pepper to the bowl and combine with salmon

7. Divide mixture into 8 and form into 8 patties

8. Heat oil in a large frying pan on medium-high heat

9. Put patties into the frying pan and cook until both sides are golden brown.
