Here’s this week’s meal plan – slightly delayed as we were away for the weekend… New this week, I’ve got a spaghetti bolognaise and sausages with a cauliflower and white bean purée.  I haven’t posted the lentil curry recipe because I have to re-jig the quantities and cooking times.  I’ll try it again in a few weeks.

For breakfast, I’ve gone with yoghurt and muesli – 125g of plain yoghurt and 2 tbsp of muesli – both store bought.

Monday’s lunch is leftover fish pie, which was in the freezer from last week.

Monday and Tuesday’s dinner is a chicken stir-fry with Asian greens, snow peas and baby corn cuts.  The simple stir-fry recipe can be found here.

Tuesday and Wednesday’s lunch is spaghetti with a bolognaise sauce made in the Thermomix.  It’s a new recipe that I’ve put together and it can be found here.

Wednesday’s dinner and Thursday’s lunch is a new recipe – with the draft below.  It’s sausages and peas cooked the Varoma while the cauliflower and white bean mash cooks in the bowl.

Thursday’s dinner is a crispy skin salmon with spinach and broccoli where everything is cooked in the Varoma and then the skin on the salmon is made crispy in the frying pan.  Instructions for cooking the salmon can be found here.

Draft Recipe

Sausages with Cauliflower & White Bean Mash and Peas

Ingredients

1 large onion

20g olive oil

1/2 head cauliflower, cut into florets

400g can cannellini beans

1 tbsp Thermomix vegetable stock concentrate

100g water

100g reduce fat milk

Salt & pepper, to season

7 sausages (~ 600g)

2 cups frozen peas

 

Instructions

1. Put onion in the Thermomix bowl and chop for 4 seconds/Speed 5

2. Add oil into the Thermomix bowl and sautee with the measuring cup (MC) off for 2 minutes/100C/Speed 1

3. Add cauliflower, beans, stock, water, milk, salt and pepper into the bowl and close the lid

4. Put peas into the Varoma bowl and sausages on the tray, assemble and put on the Thermomix

5. Cook for 20-25 minutes/Varoma/Speed 1; until sausages are cooked through (which will depend on how thick the sausages are)

6. Remove Varoma, put MC on and puree for 10 seconds/Speed 3
