This week, we’ve got eggs, risotto, curry, pie and steak. The new recipes are both vegetarian and include frittatas and curry. The chicken recipe from last week has now been posted. I managed to forget the spinach, so I’ll add it as a variation the next time I use the recipe.

We’ve ended up with a stack of eggs in the house, so I’m going to make frittatas for breakfast. These ones are made with zucchini, corn and cheese. The recipe can be found here.
I wanted to do a chicken risotto again, so I’ll make that for lunch on Monday, Tuesday and Wednesday. I’ve updated the recipe and you can find it here.
Monday and Tuesday’s dinner is a lentil and vegetable curry that I’m converting for the Thermomix. I’m going to use pumpkin, cauliflower and green beans for the vegetables. The draft recipe is below.
For Wednesday’s dinner and Thursday’s lunch, I want to revisit the fish pie recipe. I’ll serve this with some steamed cauliflower which I’ll cook in the Varoma while the pie is in the oven.
Thursday’s dinner is steak with mushrooms and snow peas; cooked on a grill pan. I’ll also cook up some thinly sliced onions in a frying pan.
Draft Recipe
Lentil & Vegetable Curry
Ingredients
1 onion, peeled and quartered
2 cloves garlic, peeled
1 tsp fennel seeds
20g vegetable oil
2 tbsp self-raising flour
1 tbsp curry powder
1 tbsp minced ginger
1 tsp ground cumin
2 tbsp Thermomix vegetable stock concentrate
750g water
1 cup green lentils, rinsed
500g pumpkin, peeled and diced into 2cm pieces
2 cups cauliflower florets
2 handfuls green beans, trimmed and halved
Instructions
1. Put onion and garlic into the Thermomix bowl and chop for 4 seconds/Speed 5
2. Scrape down sides, add oil and cook with the measuring cup (MC) off for 2 minutes/100C/Speed 1
3. Add flour, curry powder, ginger, cumin and fennel seeds into the Thermomix and cook with the MC off for 3 minutes/100C/Speed 1
4. Add stock, water and lentils into the Thermomix and cook for 15 minutes/100C/Reverse/Speed soft
5. Add pumpkin, cauliflower and beans into the Thermomix and cook for 15 minutes/100C/Reverse/Speed soft
