Every so often, I feel like making a vegetarian dish.  The trick though is to make one tasty enough that the other half doesn’t realize that there is no meat in it!  Something like a curry tends to do the trick as it is substantial and flavourful.  This dish is based on a recipe from Canadian Living’s Best – Vegetarian Dishes (Madison Press Books, 1997).

Serves 4

Lentil Vegetable Curry | ThermomixIngredients

2 onions, peeled and quartered

2 cloves garlic, peeled

20g vegetable oil

1 tsp fennel seeds

1 tbsp curry powder

1 tbsp minced ginger

1 tsp ground cumin

2 tbsp Thermomix vegetable stock concentrate

600g water

180g green lentils

300g pumpkin, peeled and diced into 2cm pieces

190g cauliflower florets

150g green beans, trimmed and halved

Instructions

1. Put onion and garlic into the Thermomix bowl and chop for 5 seconds/Speed 5

2. Scrape down the sides of the bowl, add oil and cook with the measuring cup (MC) off for 2 minutes/Varoma/Speed 1

3. Add fennel seeds, curry powder, ginger and cumin into the Thermomix and cook with the MC off for 3 minutes/Varoma/Speed 1

4. Add stock, water and lentils into the Thermomix and cook with the MC on for 30 minutes/100C/Reverse/Speed soft

5. Add pumpkin, cauliflower and beans into the Thermomix and cook with the MC off for 18 minutes/100C/Reverse/Speed soft
