The main reason that I bought the Avoca Salads cookbook (Avoca Ltd, 2008) is for their Avoca French salad dressing recipe.  Avoca is a beautiful store and café in Dublin (  I’ve modified this recipe for the Thermomix.  It makes a smaller amount and it has less oil, so it’s slightly runnier than the original.

Makes ~ 1.5 cups

Honey Mustard DressingIngredients

1 clove garlic, peeled

100g red wine vinegar

200g (extra) light olive oil

2 tbsp seeded mustard (~40g)

2-3 tsp honey

Salt and pepper to season


1. Put garlic in the Thermomix bowl and chop for 3 seconds/Speed 6

2. Add remaining ingredients into the bowl and mix for 15 seconds/Speed 7
