Cauliflower cheese has always been one of those guilty pleasures – taking perfectly good cauliflower and topping it with a fatty cheese sauce. In this recipe, I’ve tried to reduce some of those fatty elements. The kale has been added to boost the vegetable content.
Serves 6
Ingredients
1 large head cauliflower (approx. 850g when trimmed), chopped into florets
1/2 bunch kale, chopped into 2cm pieces
Cheese Sauce
60g light olive oil
40g self-raising flour
650g reduced fat milk (2%)
250g light tasty cheese, cut into 2cm pieces
1 tsp Dijon mustard
Salt and pepper to season
Instructions
1. Put the cheese into the Thermomix bowl and grate for 6 seconds/Speed 8; remove to a bowl
2. Put cauliflower into the Varoma bowl and assemble (without the tray)
3. Rinse Thermomix bowl, add 600g of water into the bowl and close the lid
4. Put the Varoma on top of the Thermomix and steam for 15 minutes/Varoma/Speed 4
5. When the timer finishes, take the Varoma off the Thermomix and toss the cauliflower around the bowl to mix
6. Put the kale into the Thermomix basket, put in the Thermomix, add the Varoma and steam for another 5 minutes/Varoma/Speed 4
7. Remove the Varoma and the basket and empty the water from the bowl
8. Turn the grill on in the stove
9. Add the oil, flour, milk, salt and pepper into the Thermomix bowl and with the measuring cup (MC) on, cook for 8 minutes/90C/Speed 4
10. Add 100g of the cheese and mustard into the bowl and cook for 2 minutes/90C/Speed 3
11. Put cauliflower and kale into a large rectangular roasting dish, mix together and top with cheese sauce; making sure all of the vegetables are covered
12. Sprinkle with remaining cheese
13. Put roasting dish into the oven and grill until golden brown
