This is a great way to use up cauliflower – I’ve added cannellini beans to the soup to make it a more substantial meal. The Thermomix makes cooking this soup easy – with time to clean up while it cooks!
Makes approximately 2L
1 large onion, peeled and quartered
1 clove garlic
20g light olive oil
1 tbsp coriander powder
1 tbsp cumin powder
600g cauliflower, cut into florets
150g potato, peeled, diced into 3cm cubes
400g can cannellini beans, drained
20g Thermomix vegetable stock concentrate
400g water
200g reduced fat milk
Salt and pepper to season
Instructions

2. Scrape down the side of the bowl, add oil and sauté with measuring cup (MC) off for 3 minutes/Varoma/Speed 1
3. Add cauliflower, cumin, coriander and sauté with the MC off for 6 minutes/Varoma/Speed 1
